French toast with Mascarapone, grilled bananas and maple butter syrup

Ingredients
Maple Buttered Syrup
- ¼ cup lightly packed brown sugar
- ¼ cup S&W Maple Syrup
- 50g butter
- ⅓ cup cream
French Toast
- 3 eggs, lightly beaten
- ½ cup milk
- 1 tablespoon S&W Maple Syrup
- ¼ teaspoon cinnamon
- 1 loaf European sweet bread, cut into 1–inch slices
- 2 ripe bananas, sliced
- 250g tub mascarpone cheese
Instructions
- Maple Buttered Sauce
- Place brown sugar, S&W Maple Syrup and butter in a saucepan and cook over a medium heat until sugar has dissolved.
- Bring to the boil, reduce heat and simmer for 5 minutes or until syrup has thickened.
- Pour in cream and stir to combine, remove from heat and set aside.
- French Toast
- Combine eggs, milk, S&W Maple Syrup and cinnamon in a shallow bowl. Take a bread slice and quickly place in egg mixture, turning carefully to coat each side.
- Place each coated slice in a heated frying pan and cook over a medium heat for 1–2 minutes on each side or until golden brown. Repeat with remaining bread and egg wash.
- Add sliced bananas to the pan and cook for 30 seconds on each side.
Layer French toast and banana slices on serving plates, dollop with mascarpone cheese and drizzle with maple buttered sauce to serve.
