1 kg Baby White Potatoes

200g Bacon, diced

1 tsp oil

1/3 cup S&W Whole Egg Mayonnaise

1/3 cup sour cream

Salt and pepper

Bunch of shallots, diced

Bunch of Chives, diced


Bring a large pot of salted water to boil. Put the potatoes in, bring back up to boil then cook the potatoes for 5 minutes or till tender

Heat oil in a pan and cook bacon until crispy and leave to cool.

Drain the potatoes then place in a large bowl and let cool

Meanwhile In a medium bowl mix S&W mayonnaise with sour cream, season with salt & pepper.

Once potatoes are fully cooled add mayo mix and coat all potatoes, add half bacon and shallots and mix through.

Then add remaining bacon, chives and shallots to garnish.
